Due to high labor costs in Brazil it is often impossible for farmers to hire enough workers to harvest farms via handpicking, instead most farms in Brazil use machines to harvest cherry, making unripe or overripe cherries go unnoticed. However, farmer Paulo Ribeiro insists on only harvesting hand-picked cherries, resulting in an incredibly high-quality selection. On top of that, with over 40 years of experience, the Ribeiro family is committed to sustainable production focusing on quality.
In consequence, this produces a distinctly clean and round cup, with high chocolate sweetness and a medium stone fruit acidity.
